No vegetable has been disliked and bullied the way that Broccoli has been abused. It is hated by young children everywhere and is wasted when served as part of school lunch. Over the years, Broccoli has been maligned and scrutinized by adults and children alike. Children across North America despise this most nutritious of plants and it has even been criticized by an American president. Yet after researching all of the facts, this may be one of the most nutritionally powerful alkaline-forming foods that you can eat. Besides, if you cover it with melted cheddar any kid will eat it.
Broccoli is from the family of cruciferous vegetables. They include broccoli, Brussels sprouts, cabbage, cauliflower, collard greens and kale, mustard, rutabaga, turnips, bok choy, and Chinese cabbage. Arugula, horse radish, radish, wasabi, and watercress are also cruciferous vegetables that are popular. The vegetable that we call Broccoli has been around for over 2000 years, The name “broccoli” comes from the Latin word brachium, which means “branch”. Americans have been growing it for roughly 200 years. The first commercially grown broccoli was harvested in New York, then planted in the 1920’s in California. It was then marketed on the East coast and by 1925 the broccoli business was well established. It is related to cabbage, brussel sprouts and cauliflower as a cruciferous plant and like most dark green foods, it has anti-cancer properties that need to be recognized among the public.
Preparing this plant for eating is pretty easy and it can be used in a wide variety of dishes as it can be used cooked or raw. It is extremely popular as part of salads and is a natural part of any chinese stir fry. In America, broccoli covered in melted cheddar cheese seems to be the most popular broccoli dish. Chopped broccoli can be tossed into rice or pasta dishes and does well in homemade soups. Everyone has their own favorite broccoli recipe or their preferred way to eat it. I like to add it to my veggie jambalaya.
People who eat an abundance of broccoli have seem to have fewer cancers of the colon, breast, lungs, and prostate. Broccoli contains indoles, which can help put a stranglehold on the estrogens that can promote the growth of tumors. High intakes of broccoli have been associated with lower risk of lung and colorectal cancer in some studies, but there is evidence that genetic differences may influence the effect of broccoli on human cancer risk. Broccoli is also rich in sulforaphane, which causes cells to make enzymes that fight cancer and beta-carotene, another cancer fighter.
- 1 green bell pepper
- 2 chopped serrano peppers (optional)
- 1 cup okra
- ½ onion
- 3 cups chopped celery
- 2 garlic cloves
- 16 oz can diced tomatoes
- 1 ½ cups vegetable broth
- ½ tsp paprika
- ¼ tsp cayenne pepper
- ¼ tsp salt
- ¼ tsp ground black pepper
- 2 cups cooked rice
- Dice the bell pepper, okra, onion, add celery, and mince the garlic. Add all these veggies to your crockpot then pour in the diced tomatoes and vegetable broth.
- Add the seasoning and give the vegetables a stir.
- Cook on low for 4-6 hours or on high for about 2 hours.
- Mix in the cooked rice.
Broccoli is a good source of calcium and its calcium is far more absorbable than the calcium of dairy products. This is good to know since there are so many negatives to eating dairy including the danger of saturated fats. Chopping or chewing cruciferous vegetables results in the formation of bioactive compounds that have anti cancer properties that negate the ability of cancer tumors to grow. Dark green veggies are full of vitamins, minerals and phytonutrients that give the body just what it needs to operate at optimum performance. Make them a part of your high alkaline foods diet.
