Broccoli and fighting Cancer

My all-time favorite vegetable to see at the dinner table has to be the hated broccoli. Children across North America despise this most nutritious of plants and it has even been criticized by an American president. Yet ounce for ounce, this may be one of the most nutritionally powerful alkaline plants that you can eat.

The vegetable that we call Broccoli has been around for over 2000 years, The name "broccoli" comes from the Latin word brachium, which means "branch". Americans have been growing it for roughly 200 years. The first commercially grown broccoli was harvested in New York, then planted in the 1920's in California. It was then marketed on the East coast and by 1925 the broccoli business was well established. It is related to cabbage, brussel sprouts and cauliflower as a cruciferous plant and like most dark green foods, it has anti cancer properties.

Preparing this plant for eating is pretty easy and it can be used in a wide variety of dishes as it can be used cooked or raw. In America, broccoli covered in melted cheddar cheese seems to be the most popular broccoli dish. Chopped broccoli can be tossed into rice or pasta dishes and does well in homemade soups. I like to add it to my jambalaya.

People who eat an abundance of broccoli have seem to have fewer cancers of the colon, breast, lungs, and prostate. Broccoli contains indoles, which can help put a stranglehold on the estrogens that can promote the growth of tumors. Broccoli is also rich in sulforaphane, which causes cells to make enzymes that fight cancer and beta-carotene, another cancer fighter.

Broccoli is a good source of calcium and its calcium is far more absorbable than the calcium of dairy products. This is good to know since their are so many negatives to eating dairy including the danger of saturated fats.
