Blue and Purple Food

There has been much publicized lately about the benefits of eating foods made from blue and purple plants. These foods contain compounds that have unique properties which benefit the human bodies immune system and cardiovascular system. Fresh fruits, including blueberries, and certain vegetables contain many of these naturally occurring antioxidants such as Vitamins C and E. Researchers have known for quite some time that berries contain antioxidants which help to fight cancer causing free radicals. A study at the University of Ohio has found that black berries are the best of the cancer fighting berries. They contain even more antioxidant power than the popular blueberry!

Foods such as blueberries, plums, black currants, purple cabbage, purple grapes and eggplant are the most famous of these healthy foods. An analysis of a survey of eating and health habits found that adults who eat purple or blue fruits and vegetables have less of a risk for both high blood pressure and low HDL cholesterol. These people are also less likely to be obese. These alkaline foods can be consumed as part of a diet intended to maintain PH balance and boost the strength of your immune system. The compound that appears responsible for this protection, anthocyanin, also gives blue and purple foods their color and might be the real reason for their antioxidant and anti-inflammatory properties.

Fresh berries can be used in desserts, eaten by hand, dried or made into jellies, jams or preserves. Many people go to berry farms to get the fruit at its freshest and then prepare them for canning. These preserves can be given as gifts during the holidays. I know of no one who can turn down these delctables jams and jellies. Maybe i should learn how to can and preserve these foods for my own personal enjoyment. EATING-VEGGIES.COM
